These are the things that sit on the bench all afternoon. Not the celebration food. Not the occasion food. Just what gets made when somebody is coming over, when school lets out, when the koko pot needs a companion. The masi popo in a stack. The pani popo cooling under a cloth. The panikeke fresh from the oil. Tea time food. This book holds six of those treats. The slow proofs and the quick fries. Masi popo crumbling at the edge of a saucer. Pani popo torn open with coconut cream still soaking through. Panikeke pulled from hot oil, soft inside, crisp at the rim. Keke saiga that lasts a week in a tin. Fa'apapa coconut bread that goes with anything. German buns golden and deep fried, sweet and dense, the colonial inheritance Samoa made better. For the cook who learned by watching their grandmother knead dough on a floured bench. For the diaspora kitchen baking pani popo in Auckland or Brisbane or Salt Lake City with imported flour and canned coconut milk. For the person who has never tasted any of this and wants to understand what afternoon feels like in a Samoan kitchen. These are not dinner desserts. These are the things the kitchen keeps on hand.
